Lemon Butter Chicken
2 tbsp oil 4 chicken breasts or thighs salt lemon pepper 1 tbsp butter 2 cloves garlic, minced juice of one lemon 1/2 tsp lemon zest 2 tbsp fresh basil, chopped 1/2 cup cherry tomatoes 1/4 to 1/2 cup cream lemon slices for garnish
Season chicken pieces with lemon pepper and salt.
Add oil to skillet. Cook chicken for 10 minutes per side. Remove chicken from the pan, and set it aside.
Add butter to the pan, and melt. Add garlic and cook for about one minute. Add lemon juice, zest and cream.
Reduce to simmer. Add cherry tomatoes, basil and lemon slices. Continue to simmer for 5 more minutes, until sauce begins to thicken.
Add chicken pieces back into the pan, and spoon sauce over top.
Serve chicken pieces with sauce spooned over top. Garnish with lemon slices.
