Lemon Basil Chicken with Pasta
I found this recipe on Taste of Home, and I instantly had to give it a go because it had three of my favorite food items in its title -- Lemon, Basil and Chicken. It proved to be an instant keeper in our house. It was quick to pull together too and light enough for a Summer meal. The addition of basil and lemon thyme from my garden proved to be the icing on the cake!
1 1/2 lbs chicken tenders (I used cut up boneless chicken breasts) 1/2 tsp salt 1/4 tsp pepper 2 tbsp butter 1 tbsp olive oil 1/2 c chicken broth 3 tbsp lemon juice 1/2 cup heavy cream 3 fresh basil leaves, sliced thinly 1/4 tsp fresh thyme, chopped fine (I used lemon thyme) angel hair pasta (4 portions, cooked and directed) Parmesan cheese, optional
Season chicken pieces with salt and pepper on both sides.
Heat butter and olive oil in skillet over medium heat. Brown chicken on both sides, and remove from pan.
In the same skillet, add chicken broth, and lemon juice. Bring to a boil, scraping the brown bits from the pan into the liquid. Cook down for 2-3 minutes until liquid is reduced to half.
Add in cream, basil and thyme. Mix well. Add in chicken and bring to a boil. before reducing heat to a simmer. Cook uncovered for 5 minutes or so until the chicken is cooked through.
Place hot angel hair pasta in a large pasta serving bowl. Arrange chicken pieces on top, and spoon the sauce over pasta and chicken. Sprinkle with Parmesan cheese if desired.
