Latin Fried Potatoes
4-5 medium potatoes, peeled and cubed 1/2 medium onion, chopped 2 tsp minced garlic 2 tbsp olive oil 1-2 tsp chili powder (or to taste) 1/2 tsp salt 1/8 tsp pepper 1/2 cup cherry tomatoes, halved 2 tbsp lime juice 1/8 to 1/4 cup chopped cilantro
In a large bowl combine potatoes, onion, garlic, olive oil, chili powder and salt and pepper. Toss well until all potatoes and onions are covered with the oil and seasoning.
Pour into a large skillet, and cook on medium-high heat until potatoes are tender and browned. (about 20 minutes depending on the size of the potato cubes). Add in cherry tomato halves, and cook an additional 10 minutes on medium heat.
Remove everything from pan and place in a large bowl. Toss everything with cilantro and lime juice.
If needed, add more salt, pepper or chili powder to taste.
