Kielbasa and Pasta Skillet Casserole
Hearty, Cheesy and Creamy -- and easy to make as well. This is a new favorite in our house. Mr Mom was happy to have leftovers to portion up to take with him for lunch at work. Ingredients
1 lb kielbasa sausage, sliced 1 onion, chopped 1 tbsp oil 2 cloves garlic, minced 1 can mild Rotel (I used 1 can diced tomatoes and 2 oz mild green chiles) 2 cups milk 3/4 cup chicken stock 3 cups small pasta (I used a quinoa/brown rice version that worked great!) 1 1/2 cups shredded cheese (I used 3 different variations of cheddar)
Saute sausage pieces and onion in oil in a large skillet. Cook until sausage begins to brown and onions are translucent. Add in garlic and saute a couple of minutes more.
Add in tomatoes (and chiles), milk, chicken stock, and pasta. Stir and turn the stove top temp down to medium. Cover skillet with a lid and allow the mixture to cook until the pasta is tender (about 10 minutes).
Add in cheese and stir to incorporate. Once the cheese is melted, allow it to sit for a few minutes to thicken up and then your dinner is ready to be served.
