Prep Time: 30 minutes Cook Time: 25-30 minutes
Yield: serves: 6-8
Ingredients
1 pie crust, unbaked 2 large tomatoes, water bathed and peeled 2/3 oz fresh basil, coarsely chopped 3 green onions, chopped ( I don’t use the white part) ¼ t salt ¼ t black pepper 1 cup light mozzarella cheese, shredded 1 cup light cheddar cheese, shredded 1 cup light mayonnaise
Instructions
Preheat oven to 375, pierce crust, and bake according to directions.
Cool slightly
Layer peeled, sliced tomatoes in crust
Sprinkle on onions
Sprinkle on basil
Mix last 5 ingredients and spread on top
Bake for 25 – 30 minutes until top puffs and browns
