Island Beef Teriyaki
Ingredients
1 lb beef steak, thinly sliced 4 cups of stirfry vegetables of your choice (I like snow peas, onions, broccoli, carrots, peppers and water chestnuts) 1/2 can pineapple chunks, drained (optional) 1 tbsp oil 4 tbsp (or more if desired) of Island sauce (recipe below) 1/4 cup water (or less)
Saute beef with oil in hot pan or wok until cooked. Add in island sauce. Mix well. Add vegetables, and no more than 1/4 cup water and stir frequently until cooked and heated through.
Serve over rice if desired.
Sauce:
1/2 cup soy sauce 1/4 cup water 1 tbsp. sugar 1/8 cup pineapple juice 1 cup brown sugar 1-2 tbsp ground ginger 2 tbsp. lime juice 2 tbsp garlic, minced 2 tbsp white vinegar
Mix wet ingredients in a bowl. Whisk in dry ingredients until well blended. Store in the fridge. The flavors will meld together over time so its best to make it the day before using for the first time.
This makes a lot, but can be used with so many different dinners as a sauce, baste or marinade.
