IP Strawberry Jam
4 cups strawberries, cleaned and quartered 1 1/2 cups sugar 3 tbsp lemon juice 3 tbsp water 3 tbsp corn starch
Put strawberries and sugar in instant pot. Add lemon juice, and stir to combine. Allow mixture to sit for 30 minutes (with instant pot turned off)
After the 30 minutes are done, place the lid on the instant pot, set to seal, press MANUAL and set the time for 1 minute. After the time is up, allow it to slow release for 15 minutes.
Release the MANUAL setting and turn on the Instant Pot to SAUTE. Heat the mixture to boiling while preparing the slurry - combining the corn starch and water. Add the cornstarch mixture to the fruit mixture. Cook, stirring until thickened and then turn off the pot.
Spoon the jam into clean mason jars (I got 1 and 1/2 pints of jam from my recipe) and place lids on. These will not be processed so place in the refrigerator and use accordingly.
