Instant Pot: Roast Dinner
3 lb chuck roast 2 cups beef broth 1 envelope of dry onion soup mix 1 lb baby carrots 1 lb baby potatoes 1 large onion quartered 4 tbsp of oil (divided in half) salt
Season roast on both sides with salt. Set aside while you turn on the instant pot to "SAUTE" Heat 2 tbsp of oil in the bottom of the pot. Add the roast and brown on both sides about 5 minutes.
Add the beef broth, and turn the instant pot OFF.
In a large gallon bag combine the dry soup mix and remaining 2 tbsp oil. Add potatoes, onion and carrots and zip the bag closed. Shake until all contents are coated. Pour the contents of the bag into the instant pot.
Place the lid on and SEAL.
On MANUAL setting, set the timer to 75 minutes.
Allow to naturally release at the end for 10 minutes before doing a quick release.
