Instant Pot: Pork Chops and Vegetables
Ingredients
3 thick boneless pork chops salt and pepper to taste 4 carrots, chopped 4 small-medium potatoes, chopped 2 cloves of garlic 1/4 cup balsamic vinegar 1/3 cup soy sauce 2 tbsp honey 2 tbsp curry powder (I used mild) 2 tsp ground ginger olive oil 1/2 cup chicken stock
Turn on SAUTE setting. Drizzle a couple of tbsp of olive in the bottom of the pot.
Season pork chops on both sides with salt and pepper. Brown on both sides, and remove from pot.
Add in minced garlic and saute for about 30 seconds.
Turn instant pot off and deglaze the pan with chicken stock, making sure to get all of the bits of pork chop off the bottom.
Add pork chops back into the pot. Add in potatoes and carrots.
Add remaining ingredients, and stir to combine, making sure that the pork chops remain on the bottom.
Put lid on and seal.
Set the instant pot to MANUAL and 12 minutes.
When the time has counted down, do a quick release. Remove the meat and vegetables.
Turn instant pot off, and then turn the SAUTE setting back on and allow the sauce to reduce until slightly thickened. Pour over the pork chops as you serve.
