Instant Pot: French Onion Soup
3 tbsp butter 1 tbsp oil 2 tsp brown sugar 4 onions (yellow, or a mix of red and yellow), sliced 4 cups beef broth 1 cup red wine (or an additional cup of broth) 1 tsp thyme 1 tsp Worcestershire sauce 1 bay leaf 1/4 tsp garlic powder 1 tsp salt 1/2 tsp pepper croutons provolone and swiss cheese slices
Set instant pot on SAUTE. Add butter and oil. Add onions and cook down. Add brown sugar and stir until onions start to become caramelized.
Turn Instant pot off and add the remaining ingredients. Set the IP to Manual and the timer to 8 minutes.
When time is up do a a quick release. Spoon the soup into oven proof serving bowls. Top with croutons and provolone and/or swiss cheese slices and place under a broiler until the cheese is melted and bubbly.
