Instant Pot: Chicken and Dumplings
2 tbsp butter 1 large onion, chopped 1 tsp poultry seasoning 1/2 tsp salt 1 cup chopped celery 1 cup chopped carrots 2 small potatoes, chopped 2 cups chicken broth 1 lb chicken brease, boneless. chopped 1 can biscuits 1/2 cup heavy cream
Set Instant Pot on SAUTE
Add in onions and seasonings (salt and poultry seasoning). Saute for 5 minutes.
Add in carrots, celery and potatoes with broth and chicken. Stir to combine. Put on lid and set to SEAL. Press MANUAL and set on 2 minutes.
When done do a QUICK RELEASE.
While waiting, cut 4 of the biscuits into quarters and each quarter into fourths.
Release lid and Reset Instant Pot to SAUTE setting. Add heavy cream. Stir. Add in biscuits pieces. Stir frequently for 5-6 minutes until "dumplings" are cooked. Add a cornstarch slurry (1 tbsp cornstarch to 1 tbsp water) to thicken if desired.
