1 lb ground beef 1 tsp oregano ½ tsp basil (dry) 1 (6 oz) can tomato paste 1 cup mozzarella cheese, grated 1/2 cup cottage cheese ¼ cup grated Parmesan 1 cup milk 2/3 cup biscuit baking mix (Bisquick) 2 eggs salt and pepper
Preheat oven to 400F.
Brown ground beef in skillet, drain. Add in oregano, basil and tomato paste. Add in 1/2 of the mozzarella. Set aside.
In 10 inch pie plate – spread cottage cheese on the bottom. Sprinkle Parmesan cheese on top. Spoon meat mixture over top, spreading evenly.
In a medium sized bowl mix baking mix, milk, eggs and a dash of salt and pepper. Blend well. Pour over top of meat mixture.
Bake for 30 – 35 minutes until knife inserted in center comes out clean. Sprinkle remaining mozzarella cheese on top and let cool for 5 minutes. Serves 6-8.
