1 cake mix (any flavor), plus ingredients to make the batter 18-24 flat-bottomed (cake style) ice cream cones (these are small cones and the amount depends on the type of cake mix used) 1 container of prepared frosting Sprinkles or other items to decorate
Preheat oven to 350 degrees F.
Prepare cake mix batter according to package directions. Set aside.
Cover a standard muffin tin with aluminum foil. Using a skewer, prick holes in the foil where the muffin cups are. The holes don't have to be perfectly in the center of the muffin cups. It is to keep the cones stable as they're baking. With your fingers, widen holes slightly and place a cone in the center of each muffin cup, flat-bottomed side down. If you have a deep popover pan, it works even better and you don’t need the foil to stabilize the cones.
Fill each ice cream cone to within ½ inch of the top of cone. Do not fill all the way to the top or the batter will overflow while baking and won’t look very nice.
Bake for about 15 minutes or until a knife inserted in the center of the ice cream cone cupcakes comes out clean.
Let ice cream cone cakes cool completely. While they're cooling, you can prick the bottom of the ice cream cones with a fork to let some of the steam escape.
When the ice cream cone cakes are completely cooled, you can frost and decorate them with sprinkles or other edible decorations. In place of frosting and decorations, you can add a scoop of ice cream on top.
These should be baked, decorated, and served within a few hours as they can get soggy after sitting for a while. Great party activity for kids. They can be baked before the kids arrive for the party or while they are busy with something else. Then they can decorate and eat them when it is time for the cake.
Alternative: To bake ahead of time, mix batter and bake cupcakes as directed. Allow to cool completely. Before assembling, add 1/4 cup of candy such as M&M’s to the cone to help it stand up. Remove cupcake papers, lightly frost the edges, and place in jumbo ice cream cones. Frost and decorate. Quantity again depends on the type of cake mix used.
