2 large red or green or both colour peppers 1 large Spanish onion 3/4 cup white vinegar 1/4 cup packed brown sugar 1 tbsp salt 2 tsp paprika 4 garlic cloves 2 jalapeño peppers (I use the seeds too) 2 8oz cans tomato paste 4 lbs tomatoes (approx 20)
Directions Chop peppers and onions into large pot. Add vinegar, sugar, salt & paprika. Chop garlic & jalapeño peppers really fine and add to mixture. In another pot bring water to a boil; add tomatoes for approx. 2 minutes ( or until they split). Peel tomatoes and add to rest of ingredients (except tomato paste). Boil mixture for 30 min., stir well, then simmer for 2 hrs. Add tomato paste last then bottle.
