Homemade Pico de Gallo
A perfect addition to any of the Mexican dishes you might serve your family. Basically its an uncooked, fresh salsa. You can turn the heat up or down depending on the peppers you add while creating it. If you like things a little mild, use jalapenos with no seeds or pith. Turn up the by choosing Serrano peppers...don't say I didn't warn you though :)
2 medium tomatoes, chopped 1/2 onion, chopped 2-3 jalapeno peppers, chopped (no seeds or pith) 1/2 cup fresh cilantro, chopped 1/4 tsp salt 1/4 tsp pepper 2 tbsp lemon juice
Combine all ingredients in a bowl. Cover and refrigerate for at least 2-3 hours.
