1/2 stick of butter (1/4 cup) 2 cups of shredded cheddar cheese 1 cup flour 2 tbsp cold water
Pulse first 3 ingredients (butter, cheese and flour) in a food processor until the mixture resembles coarse crumbs.
Slowly add the cold water until the dough comes together. Place dough in fridge to chill for at least an hour.
Cut dough in half to allow for easier rolling.
Roll dough out to a thin rectangular shape.
With a knife or pizza cutter, cut the dough into strips, and then into small squares. This recipe will puff up when baking so be sure to create a tiny hole in the center of each cracker with a skewer, or other sharp object.
Spread crackers on a baking dish lined with parchment paper, Be sure to leave spaces between each one.
