1 tbsp olive oil 2 lbs stew meat 4 carrots, sliced 1 large onion, diced 4 cloves garlic, minced 1 28oz can diced tomatoes 1/3 cup quick cooking tapioca 1 tbsp fresh chopped basil 1 tbsp cumin seed 1 tsp salt 1 cup frozen vegetables 8 small potatoes, chopped 1 small zucchini, sliced
Brown stew meat, in olive oil, in dutch oven. Add in onions, carrots, garlic, tomatoes, tapioca, and spices. Bake (covered) at 325 for 2 and ½ hours (stir once every half hour).
Add in potatoes and frozen veggies and cook for another hour.
Add in sliced zucchini, and cover. Let it stand on the counter/stove top for 10 minutes and then serve.
