Harvest Beef Stew
Ingredients
2 lbs beef stew meat 2 tsp oregano 2 tsp basil 1 tsp garlic powder 1 tsp seasoning salt 1 tbsp beef bouillon powder 1 envelope of onion soup mix 1 can, undiluted of cream of mushroom soup 2 cups water vegetables of your choice - I used: 1 large rutabaga chopped 4-5 stalks celery, chopped 1 large onion, chopped 1- 2 cups baby carrots
*you could add potatoes or any other vegetables of your choice.
Slurry at the end of cooking time: 2 tbsp cornstarch + 2 tbsp water
Brown stew meat, seasoned with salt and pepper, in a skillet with a tbsp of olive oil. Does not need to be cooked right through. Transfer to the crock pot.
Add all vegetables on top of the meat.
Combine remaining ingredients in a bowl and pour over meat and veggies. Stir slightly to mix everything together and cover. Cook on high for 4-6 hours or low 6-8 until vegetables are fork tender.
Mix slurry in a cup and stir into crock pot to thicken stew 1/2 hour before serving.
