Ham Pot Pie with Herb Crust
1 cup onion, diced 1 cup celery, diced 2 cups frozen peas and carrots 2-3 cups diced ham 2 T butter 1/4 cup flour 1 can (14.5 oz) chicken broth 1 cup whole milk 1 1/2 cup Bisquick (make your own here) 3/4 cup milk 1/2 tsp thyme 1/4 tsp sage
Combine chopped onion, celery, frozen peas and carrots, and diced ham in a 2 qt casserole dish.
In a sauce pan combine melted butter with flour. Slowly add in milk and chicken broth. Cook and mix until completely combined and smooth. Pour over top of the meat and vegetables and stir slightly to coat everything.
In a bowl combine the Bisquick mix, milk and herbs. Pour over top of the mixture in the casserole dish. Do not STIR.
Bake at 350F for 45-55 minutes until crust is cooked and mixture underneath is bubbling through and thickened.
