Ham and Scalloped Potatoes
6 tbsp butter, divided 1/4 cup flour 1 tsp salt 1/2 tsp dried thyme 1/4 tsp pepper 3 cups milk 6 cups sliced potatoes 1 1/2 cups chopped ham 1 small onion, chopped fine
In a saucepan melt 4 tbsp of butter. Add in flour, salt, thyme and pepper and cook and stir until smooth. Slowly add the milk, and stir until thickened.
Layer half the potatoes, onions and ham in a 2 quart baking dish (I used a small dutch oven). Pour half the sauce over everything. add another layer of onions, ham and potatoes (ending with the potatoes) and pour the remaining sauce over top.
Bake in a 375 degree oven, covered for 60 minutes (it will take longer if your potatoes are not thinly sliced)
Remove lid. Dot the top of the potatoes with remaining 2 tbsp of butter. Put back in the oven (uncovered) for another 20 minutes.
