We had a little ham left over from Easter, some fresh asparagus from a local Farmer's Market and gourmet pasta from Aldi's on sale this week for $1.69 a bag. It went perfectly with my new pasta serving platter. This is so simple to make, and if you can't find trottole pasta, substitute another hardy, large sized pasta.
Let Summer begin!
Ingredients
1 pound trottole pasta (or other large sized pasta) 1 cup thinly sliced ham 1 pound fresh asparagus cut into 2-3 inch pieces 1/2 cup olive oil 1 cup cherry tomatoes, sliced in half 3 tbsp chopped fresh basil 2 tbsp lemon juice lemon pepper, to taste Parmesan cheese
Directions:
Cook pasta according to directions. Drain.
Saute asparagus pieces in a small amount of olive oil. Add in ham and saute for a minute more. Remove from heat.
Toss together all ingredients, garnishing the top of the pasta with Parmesan cheese.
