Ground Beef Stroganoff
1 lb ground beef 1/2 medium onion, chopped fine 1 can cream of mushroom soup, undiluted 1/4 cup beef broth 1 cup mushrooms, sliced (I didn't use any in mine) 1/2 cup sour cream salt and pepper to taste parsley for garnishing
Brown ground beef and onions in a large skillet until meat is no longer pink, and onions are tender and translucent. Drain off an excess grease.
Add undiluted soup and beef broth.
Add in mushrooms and continue to cook until they are tender.
Reduce heat to a simmer and add in sour cream and heat through.
Season with salt and pepper to taste.
Serve over rice, mashed potatoes or noodles, and garnish with parsley flakes.
