Grilled Southwest Chicken Sandwiches
2 chicken breasts, cut in half 1/3 cup lime juice 1/3 cup olive oil 2 tbsp chili seasoning (powder)
Avocado slices or Guacamole diced tomatoes salsa fresh lettuce
Place lime juice, olive oil and chili seasoning in a large ziploc bag. Seal and shake to combine ingredients. Insert chicken pieces and reseal. Lie flat on a plate in the fridge for 1-2 hours, turning every 15 minutes or so.
*Note if chicken pieces are thick, slice in half lengthwise.
Remove chicken from bag, and throw away the marinade and bag.
Place the chicken on a hot grill, and cook for about 15 minutes (turning over once midway) until chicken is cooked through.
Layer the chicken with your favorite toppings from the list above and serve immediately.
