Grilled Mexican Street Corn
I love corn on the cob in the summer, but I wanted to try something a little different with them, other than the grill or boil then slather with butter method we're used to doing. This recipe for Grilled Mexican Street Corn kicked things up a notch!
Ingredients
4 ears of fresh corn, shucked 1/2 cup mayonnaise 1/4 cup sour cream or Mexican crema 1/2 cup crumbled Queso Fresco or Feta cheese 1/4 cup chopped fresh cilantro 1/2 tsp chili powder fresh lime juice Parmesan cheese and feta crumbles for garnish
Cook shucked corn on a hot grill, rotating occasionally until cooked -- about 8 minutes. Remove from grill.
Combine mayonnaise, sour cream, 1/2 cup crumbled feta and cilantro. Brush liberally on each ear of corn.
Sprinkle with lime juice and chili powder. Garnish with additional feta crumbles and/or Parmesan cheese. Serve immediately.
