Green Tomato Bread
We had to quickly harvest a large amount of green tomatoes from our garden as this last cold snap approached, so I've been trying new recipes -- this one is a keeper! If you like banana and zucchini bread I'm sure you'll love this one too! This makes two loaves.
Preheat oven to 350F.
3 cups flour 1/4 tsp baking powder 1 tsp baking soda 1 cup white sugar 1 cup brown sugar, packed 1 tbsp cinnamon 1 tsp salt 2 eggs 1 cup vegetable oil 1 tsp vanilla 2 cups grated green tomatoes 1 1/2 cups chopped pecans
Combine dry ingredients (flour, baking soda, baking powder, sugars, cinnamon and salt) in a large mixing bowl.
Make a well in the center and add eggs (slightly beaten), oil and vanilla. Mix until everything is moistened. DO NOT over mix.
Fold in the grated green tomato and pecans.
Pour into 2 prepared 9x5 loaf pans.
Bake on the lower rack of your oven for about 55 minutes. Allow to cool slightly before removing from pans and placing on a cooling rack.
