This recipe brings back so many memories of my grandma -- from school lunches to after school snacks. She made THE BEST egg salad and when I eat this, it tastes as good as hers. That's really saying something.
8 hard boiled eggs 1/3 cup mayonnaise 1-2 tbsp mustard (Dijon works well) 2 tbsp sweet pickle relish
Chop hard boiled eggs in a medium sized bowl.
Add in mayonnaise, mustard and sweet pickle relish and combine well. Store in the refrigerator until ready to use.
Great for sandwiches, but also served on a bed of lettuce.
