Gnocchi with Lemon Olive Oil Butter and Portabella

2 T olive oil 2 T butter 3 cloves minced garlic 1 medium/large yellow onion, chopped Juice from one lemon 1 t lemon zest 10 oz of baby portabella mushrooms 1 package of prepared gnocchi Sauté onion in lemon juice, zest, butter, garlic, and olive oil until onion is caramelized. Add mushrooms and gnocchi and sauté until tender – about 10 minutes. I made a butter with fresh basil and garlic to spread on sour dough bread and I grilled it to serve with it. Very good. |
