Frito Pie Casserole
Ingredients
4 cups of your favorite chili (here's mine) 1 can diced tomatoes (drained) 1 bag (8 oz) of Fritos (I used low salt) I chopped onion 2 cups shredded Tex-Mex cheese
Garnishes: sour cream, fresh chopped tomatoes and lettuce, sliced jalapenos)
Directions
Layer one half the Fritos on the bottom of a 2 qt casserole dish. Spread half of the cheese on top.
Cover the cheese with chopped onion, and then the chili. Cover the chili layer with the drained diced tomatoes.
Cover with the remaining Fritos, and cheese.
Bake at 350F for 20 minutes until heated through and the cheese has melted.
