Fried Potatoes and Kale

6 cups thin sliced 1/8” potatoes (about 6 medium) 1/2 cup chopped onions 6 slices bacon, sliced into 1/2" strips 5 cups kale loosely torn in 1-2” pieces 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon garlic powder 1 tablespoon oil
In a large skillet, fry bacon until done and set aside.
In bacon fat, sauté onions until tender and set aside with bacon.
Drain all but 1 tablespoon of bacon fat and add oil.
When oil is hot, add potatoes, salt, pepper, and garlic. Cook until almost tender about 10-15 minutes.
Mix in bacon and onions. On top of potatoes, add the kale. Add 1 tablespoon of water to help steam the kale. Cook about 5 minutes on low. Stir the kale into the potatoes and cook another 5 minutes or until kale is tender.
