Ingredients
I cup teriyaki sauce 1 cup orange marmalade 2 tbsp BBQ sauce 2-3 chicken breasts 1/2 cup cornstarch 1/2 cup flour 2 eggs vegetable oil cooked white rice
Beat eggs in small bowl.
In another bowl, combine cornstarch and flour.
Cut up chicken breasts into 1" cubed pieces. Coat pieces in egg and then in flour mixture. Drop a few at a time in heated cooking oil and allow to brown on all sides. Remove from oil and place on a plate covered with paper towel to absorb the excess oil.
In a sauce pan combine the teriyaki sauce, orange marmalade and BBQ sauce. Heat until it comes to a low boil. Reduce to simmer and allow to simmer for 15 minutes, until the marmalade has dissolved and all ingredients are combined.
Add the chicken pieces to the sauce mixture and stir to coat. Keep an eye on everything to make sure you don't burn everything, as the sauce will thicken quickly.
