Easy Chicken Enchiladas with Sour Cream Sauce
Ingredients
2 cups shredded TexMex cheese 8 flour tortillas 3 tbsp butter 1 cup sour cream 1 4oz can green chiles 2 cups shredded cooked chicken 3 tbsp flour 2 cups chicken stock salt and pepper paprika
Preheat oven to 400F.
Mix shredded chicken with 1 cup of the shredded cheese. Set aside.
Heat your tortillas on both sides, in a pan,in butter. Divide cheese and chicken mixture equally into each tortilla. Roll and place seam side down in a prepared 9x13 baking dish.
In a pan, melt 3 tbsp butter. Add in flour and cook for a minute, stirring constantly. Add in chicken stock and cook until smooth and slightly thickened. Add in chiles.
Remove from the stovetop and add in sour cream. Stir until blended well. Salt and pepper to taste.
Pour sauce over top of the tortillas. Sprinkle the remaining cheese on top. Add paprika on top if desired.
