Ingredients:
8 cups thin sliced cucumbers, with or without skin (about 4) 1/2 cup chopped red onion 4 tablespoons chopped parsley ¾ cup mayonnaise ¼ cup rice vinegar ½ teaspoon each salt and pepper
Combine cucumbers, onion, and parsley in a bowl.
In another bowl, mix mayo, vinegar, salt and pepper. Add to cucumber bowl and mix well.
