1 large onion, sliced thin 2 tbsp butter 1 tomato, chopped 2 cups chopped vegetables (I used broccoli) ½ cup chopped ham, sausage or bacon 8 eggs 1 cup shredded cheese ¾ cup milk salt and pepper to taste
Prepare a 9 inch glass pie dish with baking spray.
Preheat oven to 350F.
In frying pan, melt butter. Add onion slices and cook until they are cooked through and change color. Spread them on the bottom of the pie dish.
Top the onions with the chopped tomato, vegetables and choice of meat.
In a bowl beat 8 eggs, and then add the milk and cheese. Mix well and pour over top of the ingredients in the pie shell.
Season with salt and pepper. DO NOT STIR.
Bake in 350F oven for 40 minutes or until center is set. Allow to cool for 15 minutes or so before serving.
