Crustless Broccoli and Cheese Quiche
* you can cook this in a glass or ceramic baking dish or pie plate, or in individual ramekins.
Ingredients:
1 1/2 cup broccoli, cooked and chopped (fresh or frozen) 6 eggs 1/2 tsp salt 1/2 tsp pepper dash nutmeg 3/4 to 1 cup shredded cheddar 1/2 cup half and half cream
Mix together eggs, cream and seasonings. Add in broccoli and shredded cheese. Mix well.
Pour into a prepared glass or ceramic baking dish (I used a 9x9 ceramic baking dish)
Bake at 350 for 40-45 minutes, until set. Allow to sit a few minutes before cutting.
Change up the vegetables and cheeses to suit your personal tastes.
