Cream of Brussels Sprout and Bacon Soup
This would go well with our 7-up biscuits.
Ingredients
1/2 pound bacon, chopped 1 onion, chopped 2 cloves garlic 1/2 pound brussels sprouts, cleaned and chopped I can water chestnuts, drained and chopped 4 cups chicken stock 1 tbsp thyme 1/2 cup half/half cream
Saute onion and garlic with bacon in skillet. When cooked, move to crock pot.
Add in brussel sprouts, water chestnuts, chicken stock, and thyme to the crock pot. Stir and cover.
Cook in high for 4 hours.
With a hand mixer puree soup until smooth. Add in cream, puree a little more, and then allow to heat for another 30 minutes.
