Cranberry Orange Rice
Ingredients
2 1/2 cups water 1 cup long grain rice 1/2 tsp salt 1 tbsp olive oil 1/3 cup dried cranberries 1/4 cup chopped pecans 1 tsp grated dried orange peel 1/4 cup shredded coconut
Heat water with salt and olive oil. Add rice and bring to a boil. Reduce to low, cover and simmer for 15 minutes, until rice is cooked.
Add in remaining ingredients. Mix well.
Leftovers can be portioned and kept in the freezer.
