Cranberry Muffins
Fresh cranberries and orange juice are the stars in this easy to whip up muffin recipe!
Preheat oven to 375F.
2 cups flour 1 cup white sugar 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 cup butter, melted 1 egg 1 tsp vanilla 3/4 cup orange juice 1 tsp orange zest 1 1/2 cup chopped cranberries
Combine flour, sugar, baking soda and baking powder in a large bowl. Set aside.
In another bowl combine the melted butter (cooled), beaten egg, vanilla, orange juice and zest. Mix well.
Add wet ingredients to the dry until moist. Do not overmix.
Fold in the chopped cranberries.
Spoon batter into prepared muffin tins and bake for 20-25 minutes. Allow to cool slightly before removing and transferring to a baking rack to finish cooling.
