Ingredients: 1/2 head green cabbage (about 6 cups), shredded 1/2 cup chopped red onion 1/4 cup sliced green onion 1/4 cup chopped parsley 1 pound imitation crab meat, finger shredded not chopped 3/4 cup mayonnaise 1/4 cup rice vinegar 1/4 cup corn syrup 1/2 teaspoon pepper Salt to taste
6 pita bread or other kind of pocket bread
Mix coleslaw ingredients in a bowl, cover, and refrigerate for a couple hours to flavor.
To assemble:
Drain coleslaw WELL. Cut pita bread in half. Fill with coleslaw and serve immediately.
This will get soggy if not drained well or if it sits. You can add a small cabbage or lettuce leaf in the bottom of the pita to help hold the liquid and keep the bread from getting soggy.
