Copycat Chicken Tortilla Soup
Confession: I have become addicted to the seasonal toritlla soup at our local chicken fast food outlet. Facing the possibility of the day they no longer offer it, I went in search of a recipe that would keep my cravings satisfied. I found it! Ingredients
3 tbsp oil 1 medium sized onion, chopped 4 oz can mild green chiles 1 packet of dry taco seasoning 28 oz of chicken broth 1 can black beans, drained 1 can navy beans, drainied 1 can kernel corn, drained 3 cups cooked chicken, chopped (I used a rotisserie chicken) 1 cup heavy cream
In a large dutch oven, saute chopped onion in oil until translucent.
Add in remaining ingredients except for the cream. Bring to a boil and then reduce to simmer for 30 minutes.
Add in cream at the end of the 30 minutes and allow it to heat through.
