Coconut Chocolate Bars
Ingredients
1/2 cup confectioner's sugar 2/3 cup sweetened condensed milk 3 cups shredded coconut 12 ounces dark chocolate (melting chips or chunks)
Instructions:
Combine coconut, sweetened condensed milk and confectioner's sugar together in a large mixing bowl.
Form mixture into rounded log shapes, about 2 or three inches long. This is a very sticky mixture, so I found it easier to work with when I rinsed my hands in water, every few bars.
Place formed bars on a sheet lined with parchment paper. Refrigerate until firm. (I simply froze mine solid)
Melt chocolate as directed on package, and dip each piece individually, placing them back on the parchment paper to set.
Refrigerate to harden.
Makes 12 - 18 depending on the size of bars you make.
