Chicken Sausage and Rice
Ingredients
1 lb. Chicken Sausage, browned and drained 4 C cooked rice (we use brown Basmati rice) 2 jalapeno peppers, seeded and diced 2 anaheim peppers, seeded and diced 5-6 green onions, diced olive oil
Instructions
Cook rice according to instructions.
Brown and drain the chicken sausage and set aside.
Saute jalapeno peppers, Anaheim peppers and green onions until tender in olive oil, then add back in the sausage to heat thoroughly.
Serve sausage mixture on top of the rice.
(You can add a little shredded cheddar cheese if you like, but it’s not necessary.)
