The key to this recipe is a great tasting sauce. A big thanks to Jacqueline Edwards Schuster for her great pasta sauce recipe (click here). A meatless version was the base for this great family casserole, that is not only quick and easy, but scrumptious! Ingredients
2 chicken breasts, boneless, skinned 4 cups uncooked pasta (rigatoni, penne would work great) 2-3 cups of pasta sauce (recipe here) Italian Seasoning Spice Dry parsley flakes 1/2 cup shredded cheddar Vegetables of your choice if desired -- zucchini, cherry tomatoes, peppers, onions etc
Directions:
Cook pasta according to directions. Drain and set aside.
Brown chicken breasts in small amount of oil. Chop into bite sized chunks. Set aside
Heat sauce in saucepan. Add in chicken (and vegetables if desired. Toss with pasta and pour into a prepared casserole dish.
Sprinkle grated cheese over the top, and then Italian Seasoning and parsley. If you use a flavor-filled sauce it will carry this casserole.
Bake at 350F. for 20-30 minutes to heat through, and cook vegetables if you added them.
