Chicken Cordon Bleu Soup
Ingredients
1 small onion, chopped 1 rib of celery, chopped 1 clove garlic, minced 1/4 tsp salt 1/4 tsp pepper 3 cups chicken stock 1/3 cup water 1/3 cup flour 1/4 cup white wine or chicken stock 8 oz low fat cream cheese, cubed 1 cup shredded Swiss cheese 1/2 cup shredded cheddar cheese 1 large boneless skinless chicken breast, cooked, chopped 1 cup diced ham (I used a breakfast ham steak
Combine chopped onion and celery, salt and pepper and chicken stock in crock pot. Cook on low for 2 hours until vegetables are tender.
Create a slurry of 1/3 cup water/flour and add to the crockpot. Mix well. Cook on high for an additional 40 minutes.
Add in wine (or additional chicken stock) and cheeses. Stir until cheeses are melted. Add ham and chicken and continue cooking until everything is heated through.
