Ingredients
2-3 lbs boneless chicken 2 qt water 1 tbsp chicken bouillon granules 2 cups flour 2 tsp baking powder ½ tsp salt ¼ cup butter
Instructions
Place chicken, and granules in stew pot with 2 qt water. Bring to a boil and then simmer for about an hour, until the chicken is tender.
Remove the chicken from the broth, and cut up chicken into bite sized pieces . To make dumplings – combine flour, baking powder and salt. Cut in butter with pastry blender or fork until mix until it crumbles and resembles coarse crumbs. Add ¾ of cup of the chicken broth.
Mix well and turn out on to floured board to knead. Roll out to ½ inch thickness, and cut into squares.
Bring the broth to a boil, and drop the dough in, one square at a time. Stir to keep the squares separated while they cook. Reduce to low, cook 10 minutes. Add chicken to the pot, reheat and serve.
