Cheesy Hamburger Soup
1 lb hamburger 4 tbsp butter 1 onion, chopped 3/4 cup diced celery 3/4 cup shredded carrots 2-3 potatoes, cubed 1 tsp basil 1 tsp parsley 3 cups chicken broth 1/4 cup flour 2 or 3 cups shredded velveeta 1 1/2 cup milk 3/4 tsp salt 1/2 tsp pepper 1/4 cup sour cream
Cook ground beef. Drain and set aside.
Melt 1 tbsp butter in large soup pot. Add in onions, carrots, celery, basil and parsley. Cook until veggies are tender (about 10 minutes).
Add potatoes and ground beef, along with the broth. Bring to a boil, then reduce to a simmer. Cook about 10-15 minutes until potatoes are tender.
In a small skillet, melt remaining butter. Add in flour and cook 2-3 minutes. Add to the soup, stirring well and cook for another 2-3 minutes. Reduce temperature to low, and add cheese. Cook and stir until cheese melts. Remove from heat and add sour cream.
