I've seen this recipe, or similar ones everywhere for quite awhile. I finally had a change to make it tonight. It was quick to throw together, and a welcome, hearty meal at the end of a busy day.
Ingredients
1 1/2 cups dry pasta (macaroni, penne etc) 1 lb lean ground beef 2 tsp oil 1 medium onion, chopped 2 tbsp prepared mustard 2 tsbp tomato paste 1 large can diced tomatoes (28 oz) 1/2 tsp garlic powder salt and pepper to taste 2 cups shredded cheddar cheese
Instructions
Cook pasta according to directions; drain and set aside.
In a skillet, saute onions with ground beef until meat is no longer pink, and onions are translucent. Season with garlic powder and salt and pepper to taste.
Drain ground beef if needed.
Add tomatoes, tomato paste and mustard. Continue cooking over medium heat until mixture thickens slightly. Remove from heat.
Place drained pasta in the bottom of a 9x13 pan. Pour meat/tomato mixture on top, and toss slightly. Cover with foil and bake at 350F for 20 minutes.
Remove foil, and sprinkle cheese on top, and return to oven for 5 to 10 minutes, until cheese has melted.
