Cheater Christmas Pickles
Ingredients
any size jar of dill pickles -- don't skimp - buy a quality brand you know will be crunchy sugar
Optional ingredients:
1 or 2 garlic cloves finely chopped onions and sweet peppers red hot sauce (a shake or two) or red pepper flakes red hot cinnamon hearts (optional)
Remove pickles from the jar and cut into chunk sized pieces. Set aside.
Drain the juice from the jar, and return 1/2 of it to the jar. See notes below on what to do with the remaining juice.*
Pack the pickle chunks back in the jar. Add in optional ingredients of your choice. I used a bit of chopped onion and about 1/8 cup red hot cinnamon hearts.
Pack the rest of the jar with sugar to the top (usually approximately 1 cup)
Tighten the jar's lid and shake well. Turn the jar upside down and place on a towel on the counter.
For the next 24 hours, turn the jar over periodically. These can be ready to eat in 24 hours but you can leave them up to a week, rotating them every so often in the fridge.
Trust me on this - they are addictive.

"What to do with the remaining juice left in the bowl? Add mayonnaise, a little Dijon mustard, a little sour cream and your favorite seasonings for an excellent salad dressing to pour over sliced cucumbers and onions. Or pour it in a big pot of simmering soup."
