Cauliflower and Bacon Chowder
This would go well with our 7-up biscuits.
Ingredients
6 pieces of bacon, cooked and chopped 2-3 tbsp butter 1 onion, chopped 2 stalks of celery, chopped 2 carrots, peeled and chopped 2 cloves of garlic, chopped 1 head of cauliflower, chopped 1/4 cup flour 4 cups chicken broth 1 cup milk or 1/2 and 1/2 salt and pepper to taste
Instructions
In a large pot, melt butter and saute onions and garlic until translucent. Add in carrots and celery. Cook for 5 minutes, and then add cauliflower.
Continue to cook, stirring often,for another 5 minutes. Add flour, and stir to coat everything.
Add chicken broth, milk and bacon and cook until thickened for a few more minutes. Season with salt and pepper, to taste.
