Caramel Apple Cake
Ingredients
3 eggs 2 cups sugar 1 1/2 cups light cooking oil 2 tsp vanilla 3 cups of flour 1 tsp salt 1 tsp baking soda 3 cups chopped, peeled apples (I used gala) 1 cup chopped pecans
Caramel:
1/2 cup butter 1/4 cup milk 1 cup packed brown sugar dash of salt Preheat oven to 350F.
Mix together eggs, sugar and vanilla. Add in oil, and beat until creamy.
In a separate bowl mix together flour and baking soda and salt. Add to creamed mixture.
Fold in nuts and chopped apples.
Pour batter into a prepared bundt pan. It will be very full, but that's okay. Cook for at least 60 minutes or until center is cooked through. I had mine in the oven for 70-75 minutes.
Allow to sit for 10-15 minutes before turning out onto a platter.
While the cake is sitting, mix together caramel sauce ingredients in a saucepan, and boil gently for 3 minutes. Spoon over warm cake.
