Candy Apple Jam
Ingredients
5 c of unsweetened apple sauce (homemade or store bought) 3 1/2 c sugar 1/2 c water 1 tbsp lemon juice 1/2 tsp vanilla 1/2 teaspoon sea salt dash of cloves (optional) 3 tbsp rum (optional but really adds a great flavor) In a large pot combine 2 cups of the sugar, the water and the lemon juice. Bring to a slow boil, and allow it to turn to a nice light amber color. You do not need to stir while it does this, but make sure your heat isn't too high that you end up burning it. In a bowl combine the remaining sugar, vanilla, sea salt and a dash of cloves if desired. When the boiled sugar mixture is amber in color, add the apple sauce and the other sugar mixture. Be careful that you don't get burned if the mixture bubbles up. Melted sugar is HOT. Continue stirring the mixture on a very low boil until it thickens, and you're able to leave a temporary path in the mixture with your spoon. Remove from the heat, and add the rum if desired. Pour the jam carefully into sterilized half pint jars. Wipe rims, and add lids. Process for 10 minutes in a hot bath. Makes 6 jars. |
